

Restaurant De Kas
I had heard about De Kas so many times, mostly because of their farm to table approach, but I didn’t fully get it until I was there in Amsterdam. The restaurant sits in a greenhouse, just outside the centre, surrounded by its own gardens, and almost everything you eat is grown there or sourced very locally. It’s not something they explain in a heavy way, it’s just how they work. You can feel it in the menu. There’s no real choice, just what’s ready that day, what’s in season
